Serves 2


Ingredients:

2 cooked salmon pieces, chopped or flaked

1/4 cup (60ml) soy sauce

1 tablespoon sesame oil

1 teaspoon grated ginger

2 cloves garlic, minced

1 spring onion, thinly sliced

1/4 teaspoon chilli flakes

2 portions of cooked brown rice

1/2 cup (75g) shredded or thinly sliced carrots

1/2 cup (75g) thinly sliced cucumber

1 avocado, sliced

2 tablespoons chopped fresh coriander

2 tablespoons toasted sesame seeds


Instructions:

In a large bowl, whisk together the soy sauce, sesame oil, honey, ginger, garlic, spring onion, and chilli flakes.


Add the cooked salmon to the bowl and gently toss to coat with the marinade. Cover and refrigerate for at least 30 minutes or up to 1 hour.


When ready to serve, divide the cooked brown rice between two bowls.


Top each rice bowl with marinated salmon, carrots, sliced cucumber, and avocado.


Sprinkle chopped cilantro and sesame seeds over the top of each bowl.


Serve immediately and enjoy!
